Egg And Bacon Flan Quiche Recipe
Egg And Bacon Flan Quiche Recipe
Ingredients
- Pastry:
- 1 cup Plain flour
- ¼ tsp Salt
- 80 g Butter
- 2-3 tbls Cold Water
- Filling:
- 1 pack Lardons (you could use 6 slices of bacon, chopped)
- ½ Large onion, roughly chopped
- 80 g Strong cheese, grated
- 4 Large eggs
- ¼ tsp Salt
- ¼ tsp Ground black pepper
- ⅛ tsp Cayenne pepper
- 1 Large tomato, thinly sliced
- Add less salt if your going to make this for kids.
Directions
- Place the fflour, salt and butter into a food processer and whizz for 30 seconds or until a ball starts to form. Add the water and whizz again until the pastry leaves the sides - no more than 2 minutes. This can be done by hand.
- Wrap the pastry ball in cling film or foil and place into the fridge for 40 minutes.
- Heat the oven to 425°F/220°C/Gas Mark 7 (Hot)
- Use a floured rolling pin and roll out the pastry so it is about 2 inches larger than a 9 inch quiche pan. Fold into quarters and place it into the dish.
- Unfold and press the party into the bottom and sides. Cut the pastry about 1 inch above the lip of the pan.
- Carefully line the pastry with a sheet of foil and bake for 10 minutes.
- Beat the eggs, salt, cayenne and black pepper together in a medium bowl.
- Cook the lardons. They don't have to be crisp unless you like them that way. Just cooked will do.
- Remove foil carefully and bake for another 2 minutes.
- Take the pastry case from the oven and turn the heat down to 325°F/150°C/Gas Mark 3 (Low)
- Sprinkle the lardons, most of the grated cheese (leave half a handful) and the onions over the base of the pie crust. Pour in the egg mix and sprinkle the remaining cheese on top. Place the tomato slices on the top of the cheese - leave spaces if you like cripsy bits of cheese.
- Bake for 45-50 minutes or until a knife comes out clean.

Chocolate Chip Cheesecake
Chocolate Chip Cheesecake
Indulge in this decadent cheesecake to satisfy your chocolate cravings!
2 (3-oz) packages of cream cheese, softened
1 (14-oz.) can Eagle® Brand Sweetened Condensed Milk (NOT evaporated milk)
1 egg
1 teaspoon vanilla extract
1 cup mini-chocolate chips
1 teaspoon flour
1 (6-oz.) Ready Crust Chocolate Pie Crust
Chocolate Glaze (recipe follows)
Chocolate Curls (optional)
Preheat oven to 350°. With mixer, beat cheese until fluffy, gradually beat in Eagle Brand until smooth. Add egg, vanilla; mix well.
Toss chips with flour; stir into cheese mixture. Pour into crust.
Bake 35 minutes or until center springs back when lightly touched. Cool and top with glaze and curls. Serve chilled. Refrigerate leftovers.
Chocolate Glaze: Melt 1/2 cup mini-chocolate chips with 1/4 cup whipping cream; cook and stir until thickened and smooth. Immediately spread over pie.
Tip: To prevent chocolate chips from floating down to bottom of pie add chips after baking cheesecake for a short period. Remove cheesecake from oven after 5 - 10 minutes, sprinkle chocolate chips over the pie and then continue to bake for remaining baking time. Be careful when handling cheesecake, pie pan will be very hot.
